Ingredients

  • 1 egg, room temperature
  • 4 tablespoons honey
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract
  • 1¼ Afridelight flour
  • ½ teaspoon baking powder
  • pinch of salt
  • ½ teaspoon orange zest

Direction

  1. In a medium mixing bowl, whisk together the egg and honey.
  2. Add the vegetable oil and vanilla extract and continue to whisk.
  3. Add the Afridelight flour, baking powder and orange zest and combine with the help of a mixing spatula.
  4. Cover the dough with plastic wrap and refrigerate for at least 30 minutes.
  5. When ready to roll out the dough, preheat the oven to 375℉ (190°C). Position rack to middle.
  6. Line a large baking sheet with parchment paper. Set aside.
  7. On a floured surface, use a rolling pin to roll out the dough to ¼ inch thickness.
  8. Use any cookie cutter to cut out shapes from the dough. Re-roll scrapes.
  9. Place about ½ inch apart on parchment-lined cookie sheet and gently press down with to flatten slightly with a meat pounder (optional).
  10. Bake for 12-15 minutes or until bottoms are lightly browned.
  11. Remove from the oven and allow to cool for 5 minutes or so before transferring to a rack.

Ingredients

  • 1½ cups Afridelight flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ⅛ teaspoon ground allspice
  • ½ teaspoon salt
  • 3 tablespoons salted butter, melted
  • ½ cup pure honey (or maple syrup)
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 cup unsweetened applesauce
  • ¾ cup finely shredded carrot (2-3 medium carrots)

Instructions

  1. Preheat oven to 350 degrees F. Line a muffin pan with paper or silicone muffin liners (or grease the pan).
  2. In a large bowl, combine the Afridelight flour, baking soda, cinnamon, ginger, nutmeg, allspice, and salt. Whisk thoroughly.
  3. In a small bowl, combine the melted butter, honey, egg, vanilla extract, and applesauce and whisk to combine. Pour the wet ingredients into the dry ingredients. Stir just until combined.
  4. Fold in the shredded carrots, being careful not to over mix.
  5. Scoop batter into your prepared muffin tin. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Let cool a few minutes before serving.

Afridelight MEDITERRANEAN PIZZA

INGREDIENTS

  • For the quick pizza dough:
  • 1 cup all-purpose flour (do not sift)
  • 1 cup Afridelight flour (do not sift)
  • 2 teaspoons baking powder
  • ½ teaspoon fine salt
  • ½ teaspoon dried oregano
  • 1 cup milk
  • ⅓ cup olive oil

 

  • For the topping:
  • 3 tablespoons tomato paste
  • 1 tablespoon water
  • ¼ teaspoon pepper
  • ½ red bell pepper, sliced
  • ½ green bell pepper, sliced
  • ½ onion, sliced
  • ¼ cup olives, sliced
  • 1 cup tomatoes (cherry, heirloom or other), cubed
  • 2 cups feta cheese, crumbled
  • A few sprigs of fresh oregano (or ½ teaspoon dried)

INSTRUCTIONS

  1. Preheat oven to 356°F (180°C).
  2. In a large bowl mix flours with salt, oregano and baking powder.
  3. Add milk and olive oil and stir with a fork until the dough comes together.
  4. Dust your work surface with flour and transfer the dough there. You don’t have to knead it, just roll out into a circle about 15 inches (38 cm) in diameter. If it’s sticky, dust with more flour.
  5. Transfer it to a greased pan.
  6. Mix the tomato paste with water and pepper and spread it onto the dough.
  7. Top with feta cheese and the rest of the ingredients except the oregano.
  8. Bake at the lower shelf of your oven for 20-30 minutes, until vegetables are caramelized.
  9. Sprinkle with oregano and eat!

 

Afridelight VEGGIE LOVERS PIZZA

 

INGREDIENTS

AMOUNT FOR 8 SERVINGS

  • 500g fresh stir-fry vegetables such as asparagus, broccoli, cauliflower, mushrooms, multicolored bell peppers, red and white onions, and courgettes, cut small
  • 2cloves garlic, peeled and chopped finely
  • 100g pizza sauce or tomato sauce
  • 2tbsp tapenade
  • 2tbsp sun-dried tomatoes, diced
  • 1 x 12inch prepared thin Afridelight pizza crust
  • 50g mozzarella cheese, thinly sliced

Direction

Preheat the oven to 425°F. Heat some oil in a large skillet and sauté the vegetables and garlic for 2-5 mins. Mix the tomato sauce, tapenade and sun-dried tomatoes and spread the mixture mixture on the pizza crust. Top with the cooked vegetables and cheese and put the pizza directly onto the middle shelf of the oven and bake it for 10-15 mins. Cut the pizza into 8 pieces and serve.

 

Afridelight Spinach, Tomato & Roasted Garlic Pizza

 

Ingredients

  • 1 whole head garlic
  • 1¾ – 2¼ cups Afridelight flour
  • 1 (1/4-oz) envelope pizza yeast (I used Fleischmann’s brand)
  • 1½ tsp. sugar
  • ¾ tsp. salt
  • ⅔ cup very warm water (120º – 130ºF)
  • 3 Tbsp. olive oil
  • 2 tsp. olive oil
  • 2 cups baby spinach leaves
  • ¾ cups shredded mozzarella
  • ¼ cup grated parmesan cheese
  • ¾ cup halved cherry tomatoes
  • 1 Tbsp. pine nuts

Instructions

  1. Preheat oven to 350ºF. Slice ½” off the top of the garlic head and place cut side up on a piece of foil. Drizzle with 1 tsp. olive oil and a bit of water. Wrap up in foil and bake in preheated oven for 50 minutes.
  2. Meanwhile, Combine 1 cup flour, undissolved yeast, sugar and salt in a large bowl. Add water and 3 Tbsp. olive oil. Mix until blended, about 1 minute.
  3. Gradually add enough remaining flour until a soft ball is formed. Dough will be somewhat sticky.
  4. Knead dough on a floured surface, adding more flour if needed. About 4 minutes, until smooth and elastic.
  5. Preheat oven to 425ºF.
  6. Pat dough to fill out greased pizza pan. Spread 2 tsp. olive oil onto dough.
  7. Squeeze cooled garlic up and out of the skins and into a small bowl. smash with a fork to make a creamy garlic mixture. Spread onto oiled crust. Season with salt and pepper.
  8. Bake crust for 8 minutes. Then top with spinach, mozzarella, cherry tomatoes, parmesan and pine nuts.
  9. Cook for an additional 5-8 minutes or until cheese is melted and tomatoes are tender. Cut into slices and enjoy

Number of Servings: 8

Ingredients

2 cups Afridelight flour
1 pkg. or 1 tbsp. active dry yeast
3/4 tsp. salt
1 c. warm water
1 tbsp. olive oil
1 tsp. honey

Directions

  • Pour flour into a large mixing bowl.
  • Add yeast and salt. Mix well.
  • Add water, oil and honey; mix well.
  • Cover with a moist cloth and place in a warm spot for 10 minutes to rise.
  • Punch down and press into a greased 14 inch pizza pan or a 10 inch pan for a thicker crust.
  • Spread sauce and other ingredients on pizza crust.
  • Bake at 425 degrees for 15 to 20 minutes or until crust is golden brown and cheese is melted.

You can also use a bread machine.

Ingredients

1 cup Afridelight flour
1/2 cup all purpose flour
1/4 t. salt
1/4 cup honey
3 1/2 cups milk
4 eggs

Direction

– Combine all of the dry ingredients with a whisk. Beat the honey and eggs into the milk, then slowly incorporate into the dry mixture, whisking continuously.
– Heat a small nonstick skillet on medium and spray with cooking spray. Add 1/4 cup batter and allow it to fill the pan to the edges. Cook on one side for 3 minutes before carefully flipping (crepe will be very thin – this takes some practice) to finish cooking 1 minute more. (I tend to use 2 pans to speed up the cooking process; otherwise you’re standing over the stove for an hour).
– Stacking crepes on a plate until you’re done cooking will keep them hot so that everyone can eat together for a change!
– Top or fill with fresh berries, powdered sugar and honey, whipped cream, bananas and chocolate sauce or nuetella, the possibilities are endless!

{Note: the yield is going to depend on the size/shape of your waffle maker. The recipe made 3 big belgian waffles in mine.}

Ingredients

1 1/2 cups Afridelight flour
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons sugar
1 large egg, at room temperature
1 1/2 cups lukewarm milk
1/3 cup canola oil

Direction

Preheat your waffle maker according to the manufacturer’s instructions. If you want to keep the waffles warm, preheat your oven to 200 F then place a wire rack inside of a rimmed baking sheet and pop in the oven.

In a large bowl, whisk the flour, baking powder, salt, and sugar together. In a large measuring cup, whisk together the egg, milk and canola oil. Add this mixture to the dry ingredients and mix just until barely combined (lumpy batter is a-ok!).

Fill the wells of your waffle maker and cook according to the manufacturer’s instructions (4 minutes in my waffle maker). To keep the first waffles warm while you finish up the batter, transfer to the wire rack in the oven. Serve with your favorite toppings!

Afridelight buns are soft, dense, and make the perfect hamburger bun! Plus they only take an hour to make start to finish.

Ingredients

  • 2 tbsp Dry Active Yeast
  • 1 cup & 2 tbsp Warm Water
  • 1/3 cup Canola Oil
  • 1/4 cup Raw Cane Sugar (unrefined sugar, but you can use normal sugar if you want)
  • 1 Egg
  • 1 tsp Salt
  • 3 1/3 cup Afridelight (Plus 1/2 – 3/4 cups for dusting and kneading)

Instructions

  1. Dissolve the yeast in warm water. Add oil and sugar. Let stand for 5 minutes; the mixture will look bubbly.
  2. Mix in egg, salt, and flour to the yeast mixture. You will form a soft and slightly sticky dough.
  3. Let dough sit for 5 minutes.
  4. On a very well floured surface knead the dough until smooth. Continue to add flour as necessary to avoid the dough from sticking to your hands or the surface (you may feel like it is a lot of flour – I use about 1/2 cup). Kneading takes roughly 5 minutes.
  5. Divide the dough into ten buns – you may need to flour your hands for this. Place on baking sheet with approximately one and a half inches between buns.
  6. Cover and let rest for 15 minutes. Buns will grow but not double in size. In the meantime, preheat oven to 425°.
  7. Bake buns for 8-12 minutes, until golden brown.

This is the perfect recipe for a gluten free indulgence. It is easy to make this pasta, which requires very few ingredients.

Ingredients:

1 1/2 cup Afrilife rice flour
1/2 cup potato starch
2 tsp Xanthum Gum
1 tsp salt
4 eggs

Method:

  1. Sift the Afrilife rice flour, potato starch, xanthum gum and salt.
  2. Whisk the eggs in a bowl. It’s always better to do this in a separate bowl than putting the eggs straight into a mixer to create more air.
  3. In a free standing mixer, blend the flour mixture and eggs till it forms a dough. Remember, gluten free flour should not be mixed with a dough hook as it lacks the protein and can become too stiff. This process can be also done by hand.
  4. Make small balls out of the dough. At this point, you might need to add oil.
  5. Using a pasta machine, roll out the dough into a thin sheet. If you don’t have a machine, don’t worry, use a roller to roll out the pasta dough and cut into thin strips.
  6. Boil the pasta with water and salt until cooked. Toss with creamy sauces and toppings of your choice and serve immediately.

Ingredients

1 cup Afrilife rice flour
salt to taste
1 egg, beaten
1 tablespoon vegetable oil
1 tablespoon water, or as needed
Cooking spray

Directions

Mix rice flour and salt together in a bowl;
form a well in the center of the mixture.
Stir in egg, vegetable oil, and enough water to make a smooth batter.
Spray a non-stick frying pan with cooking spray and place over medium heat; pour about 1/4 cup batter into the hot pan.
Tilt pan until batter covers the whole bottom surface making a thin pancake; cook for 1 minute.
Flip and cook about 1 more minute. Repeat with remaining batter.
